Today is Thursday. I’ve been trying since Sunday to write an entry but life, as is often the case, gets in the way of doing the things we want. Since we’re 17 days into the new year, I figure I should share my goals for this year — just keep in mind that they’re not resolutions. I am simply continuing what I started in 2018, though, which is to take care of my best self.
This probably means something different for everyone. For me, it means doing the things I should do to make sure I’m happy and healthy. It’s usually little stuff like remembering to take my anti-depressant or taking the time after a shower to apply moisturizer or flossing on a daily basis. You’d be surprised how often I forget to do these things. I learned last June — when I had a run-in with periodontal disease — that they catch up with you!
So this year, I’m focusing on those little things that help me put my best foot forward in life. And because I’ve gained almost 30 pounds since I quit smoking in June (thanks, dental nonsense!), I’m working on following my doctor’s orders to eat more like a diabetic. I’m not diabetic, mind you, but with high triglycerides and some elevated liver enzymes (or something like that), he recommended it to get me back on the right path. Having gained the weight, I physically and emotionally feel bad so eating better can only help!
With that in mind, I did some meal prepping this week! I made some yummy baked lemon and garlic chicken and some delicious roasted vegetables. I just grabbed whatever seemed interesting at the grocery story: broccoli; cauliflower; brussels sprouts; sweet peppers; carrots; and squash; then sprinkled it with some all-purpose seasoning and roasted it all. I wound up with three lunch meals (5 oz. each of chicken and vegetables) that have been very tasty. Even better, it’s a low calorie lunch that fuels my afternoons.
But the best thing I can do to care for my best self is to spend more time with Rocco. I’m pretty sure that’s one goal I’ll definitely meet.
